St. Patties Day Green Eggs &... Spinach!

St. Patrick's Day... *sigh*. A day to drink green beer right? Well not so much, turns out it is the death date of St. Patrick, the patron saint of Ireland. I know, the first thing that came to mind when St. Patty kicked the bucket was a big pint of green beer, right? Well I say swap out that beer for these delicious protein packed green eggs this St. Patties Day. 

 

 

Green Eggs Recipe

Serves 2

 

Ingredients:

  • 1 tbsp coconut oil

  • 4 eggs

  • 4 cups of spinach

  • 1/4 cup of almond milk 

  • 1 tbsp hemp hearts

  • 1 green onion

  • Salt and pepper to taste

 

Supplies:

  • High speed blender

  • Frying pan

  • Spatula

 

Method: 

  1. Begin by heating frying pan on stove top on medium heat. Place coconut oil in your pan. 

  2. While your pan is warming place spinach, eggs and almond milk in your blender and blend until smooth. 

  3. Placing your egg mixture in the frying pan, allow to sit for 10 seconds.

  4. While eggs are setting, chopped up your green onion and set aside.

  5. Continue to gently stir the egg mixture as they start to turn firm on the bottom. 

  6. Once cooked to your liking remove from heat and top with your green onion, hemp hearts and salt and pepper to taste. 

  7. Enjoy!
