Mouth Watering Broccoli Tots (Plus A Bonus Recipe!)

 

There is nothing worse than when some chick shows up and tells you all the things you need to stop eating. You know what I'm talking about, "no chocolate, no coffee, fries, chips, deep fried and/or... UGH! The list really does go on. You might be saying "this chicks crazy!" Well I'm here to tell you, that's not what we are here to do today. The reality is, no these foods are not healthy, nutritious options to put in your system, but there are so many delicious options that are. You wouldn't go putting diesel in your gas engine would you? 

 

The BEST revelation I ever had was when it hit me that it wasn't about taking away these foods and feeling deprived, craving and hangry, it was about finding a healthier alternative and that's what I'm here to do for you! 

 

 

Oat flour is one of my favourites! It is easy to make and reasonably priced. These gluten free oats/flour alternative provides a great source of fiber to keep your pooper clean and protein to keep you strong like bull all while avoiding bloating and the inflammatory effects that gluten, found in wheat, tend to cause. We will be making a rustic chopped oat flour that will replace what would normally be bread crumbs in a recipe such as this.

 

 

 

 

 

 

Folks, broccoli might get stuck in your teeth, but french fries will get stuck on your ass. So instead of having fries on the side, I'm going to give you a bonus recipe, my sweet potato pucks (see below).

 

 

Finding healthier alternatives for YOU is one thing, but getting the whole family on board can be another. While Eric, my partner is a great cook, he would really rather not, until I hired him as my newest hand model and he is in there like a dirty shirt! Invite your family to join you in the kitchen on your families journey to health!

 

 

Mouth Watering Broccoli Tots 

Makes 20 Tots

 

Ingredients: 

  • 1 bunch of broccoli (we want to end up with 2.5 cups of cooked diced broccoli) 

  • 1 egg

  • 3/4 cup oats

  • 1/4 onions diced

  • 1-2 cloves garlic

  • 1/4 cup nutritional yeast 

  • 1/4 cup coconut flour

  • 3 tbsp hemp hearts

  • 1 tsp sriracha (optional)

 

Method: 

  1. Chop broccoli into bite sizes florets.

  2. In a pot bring 2 cups of water to a boil. Add broccoli and cook for 2 minutes. 

  3. Remove from heat and strain water.

  4. Dice broccoli into fine pieces as seen in the pictures above. Add to a mixing bowl and set aside.

  5. Preheat the oven to 400°F.

  6. Begin chopping oats into fine pieces. Remember we are looking to mimic bread crumbs here, so nice and small is great. Add to mixing bowl. 

  7. Add remaining ingredients into bowl and combine mixture. 

  8. With a heaping tbsp. of mixture begin rolling in the palm of your hand and shape into your baby tots. Place tots on baking sheet

  9. Bake Broccoli Tots for 18-20 minutes, flipping half way through, until the outsides have browned nicely. 

 

Tip: Gently wilt some kale in a steamer or in a pan with olive oil. Place tots on top of kale and enjoy with my bonus Spiced Sweet Potato Puck recipe below to make a delicious meal.

 

 

 

 

Spiced Sweet Potato Pucks

Serves 2

 

These babies are to die for. A creamy inside with a caramelized outside, they truly are a delicious contender when looking to find a healthier alternative to french fries. Enjoy!

 

Ingredients:

  • 1 large sweet potato 

  • 3 tbsp coconut oil

  • 1 tsp garlic powder

  • 1 tsp turmeric

  • 1 tsp cumin 

  • 1/2 tsp cayenne (optional)

  • 1/2 tsp salt 

 

Method:

  1. Preheat oven to 350°F.

  2. Begin by slicing your sweet potato into 1/2" thick pucks. 

  3. Coat in coconut oil 

  4. Sprinkle additional spices on top of potato pucks.

  5. Bake for 20 mins., flipping over once. 

  6. Turn heat to 400°F and bake for an additional 15-20 minutes, turning over once more half way through. 

 

Tip: To make kid friendly, remove cayenne
