Easy Homemade Coconut Milk Recipe


Is it just me or do you wish you had an almond tree in your backyard? Almond milk has always been my go to for a nutritious milk alternative, but LAWD are those little gems expensive. So, I've been on the hunt for other options. I've tried both boxed and homemade hemp milk, hazelnut milk, cashew milk and then there was this homemade coconut milk, so I've changed my mind I want a coconut palm tree. Too much to ask for in Canada? I think not!

This homemade coconut milk is truly refreshing, delicious and inexpensive. Unsure why you should check out coconut milk, here are my top 5 reasons:

  • Improves digestion by nourishing the gut lining

  • Free from preservatives, thickeners and emulsifiers

  • Contains lauric acid, a medium chain fatty acid thats used by the body for energy

  • Prevents fatigue and provides electrolytes

Easy Homemade Coconut Milk Recipe

Ingredients:​

  • 1 cup unsweetened coconut shreds

  • 4 cups warm water

Method:

  1. In a high speed blender combine ingredients and blend until smooth. Side note: check out the froth on top of that milk. Try topping your hot chocolate, coffees or matcha lattes with it.

  2. Strain through a nut milk bag into a bowl.

  3. Pour into jar for storage in fridge. Lasts 3-4 days.

Enjoy your coconut milk in cereal, smoothies or in a glass on its own.
