Chocolate Nutty Turtles

Sweet oozing chocolately turtles! If you have a sweet tooth, these are definitely for you. It's not very often that I personally get a hankering for sweets, but I happen to live with a chocolate monster. It began with dispersing Eric's chocolate treats throughout the house so that there would be a little bit for each day, but he started to catch on when chocolate would appear in his lunch, but was never in the pantry. It eventually led to a full house tear down until he found the chocolate. This sounds dramatic and like we may need to check him into a detox centre for chocolate, but half of this process I think was just for the fun! I did eventually learn the only way to slow him down was to freeze his sweets and while I didn't check him in for chocolate rehab, I did put him on a candida cleanse and that got his sugar cravings in check.

Today, I continue to freeze our treats and my freezer has become a life line of delicious healthy grab and go meals. These chocolate nutty turtles are no exception and have become the perfect addition to my freezer repertoire.

A blend of pecans, cashews and almonds wrapped in a delicious soft date and topped with homemade chocolate, it's that easy! The thing that I love about easy, delicious recipes is when we dedicate one hour here and there to food prep, we can easily stock up the freezer, cut down meal times and feel more satisfied because we have taken time to make balanced, nutrious foods, accessible.

As you slowly stock up your freezer, it will become your life line too! In our house an unstocked freezer means an increased chance of making some less than healthy food choices. Let's dive into this easy freezer friendly treat!

Chocolate Nutty Turtles

Makes 30 turtles

Ingredients:

  • 30 pecans, almonds or cashews

  • 30 dates

Chocolate coating:

  • 1/2 cup raw cacao powder

  • 1/2 cup coconut oil

  • 2 ml liquid stevia

  • 2 tbsp honey

  • pinch of salt

Method:

  1. Begin by removing pits from your dates, if you purchased pited dates, skip this step.

  2. Line a cutting board or baking tray with parchment paper and set aside.

  3. Place one nut inside each date, pinch closed and place on your tray.

  4. Once all your dates are stuffed with love, in a small pot begin melting coconut oil over medium heat. When your coconut oil has melted, reduce to low heat and begin whisking in cacao powder, stevia and honey.

  5. Turn off heat and place all dates in your pot, gently stirring to cover in chocolate.

  6. One at a time, place the dates on your parchment paper and then into the freezer for 10 minutes.

  7. Remove from freezer and coat all dates in chocolate once again, then back to the freezer. I repeated this process three times for an extra chocolately experience, until my chocolate was all gone.

  8. To save time, coat once or twice and pour remaining chocolate into muffin trays and freeze for chocolate pucks, which can also be easily stored in the freezer.
