One Pot Chunky Tomato Soup


Soup is an all time favourite of mine. Warm and comforting, quick and easy, light or hardy! With such diversity, does a meal get any better?

While this might seem odd to you, I spent most of the summer eating warm soups. My body asked and I listened, meaning I have created an array of delicious soup recipes that will be sure to soothe your tummy on the good and the bad days. I will be sharing these soups through the winter for you to enjoy.

The week I created this soup, I was not feeling so hot and diarrhea was leaving me feeling weak and my stomach nauseous. I really just wanted a simple tomato soup, but I knew I had to get something into me that would slow the diarrhea.

Pumpkin puree is a fabulous food to help bulk your stools and gently slow the violent bowel movements. So with little steam, I whipped up this one pot soup that was the perfect mix of creamy (from the coconut milk), chunky (from the tomatoes) and soothing (with the pumpkin).

In the spirit of keeping this soup quick and light, let's get right to it!

 

One Pot Chunky Tomato Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 3 garlic cloved, minced

  • 1 can diced tomatoes

  • 2 cups pumpkin puree

  • 2 cups vegetable broth

  • 1 can coconut milk

  • 1/4 tsp herbamare

  • 1/4 tsp sweet paprika

  • 1/8 tsp cinnamon

  • 2 bay leaves

  • pepper

Optional toppings: extra coconut cream, chili flakes or fresh thyme

Method:

  1. Begin dicing your onion and mincing your garlic cloves, set aside.

  2. In a medium pot, warm olive oil over medium heat, then adding onions and garlic.

  3. Reduce heat to medium-low and cook for 3-5 minutes until onions are translucent.

  4. Add remaining ingredients and simmer for 15-20 minutes.

  5. Serve and enjoy!
